My Daily Ritual: Warm Lemon Water “Super Tea”

Hello everyone! It’s been a little while — I’m busy with some exciting things for this blog (coming soon!) but today I wanted to share a personal recipe of mine that I enjoy daily. It’s soothing, comforting, and really healthy, plus it’s great for you digestion! Perhaps by now you’ve heard that you should start your day with a glass of warm lemon water. Not only does drinking warm water help to rehydrate your system (our bodies are most dehydrated after we wake), it also aids in digestion, boosts the immune system, balances pH levels, and helps detox your body. But why stop at just the lemon?

My recipe kicks things up a notch with grass-fed gelatin that provides protein and helps soothe and repair your digestive tract, along with coconut oil which is an incredible source of MCTs (medium chain triglycerides), a kind of fatty acid that helps you burn more fat while lessening hunger, amongst a whole host of other health benefits. I find that oftentimes when I don’t have time for breakfast (I’m a big fan of the snooze button) I can just put this “tea” in my Contigo tumbler and I’m perfectly satisfied until lunchtime! Ooey Gooey Banana Samoa Cake (Gluten-Free, Dairy-Free)

My younger sister just turned 21 – I am so excited! To celebrate this momentous occasion (and since I’m always on birthday cake duty) I decided to make her a cake. But being the indecisive little third child she is, she told me to “get creative and do whatever” each time I asked her what kind of cake she wanted…

She loves bananas and banana cake, so I decided to combine that with another favorite: Samoas. Yes, like the Girl Scout Cookie. The result is tender, moist banana cake layered with creamy banana coconut filling and flooded with ooey gooey caramel sauce and chocolate ganache. Needless to say, it was a hit.

Food Feature Friday: Lettuce

This week’s Food Feature Friday was inspired by something I’ve been getting a lot of in my CSA lately: lettuce! I’m not the biggest salad person, but there’s something to be said for perfectly fresh in-season lettuce. It’s crispy, crunchy, has a ton of flavor and is super hydrating!

But did you know that lettuce is also really healthy? Now yes, I know, it’s not like you’d really ever think of lettuce as unhealthy but it’s actually quite the powerhouse, packed with beneficial vitamins and nutrients like vitamin K, vitamin A, and folate. In addition, it’s a good source of fiber, potassium, and manganese. Who knew, right?

Needless to say, with all this lettuce coming around I’ve needed to find something to do with it. A girl can only eat so many salads (and lettuce wraps…) Though they were a bit tough to find, below are a few recipes I’ll be trying soon:

Confession: I love eggplant. Can’t get enough. It’s always been one of my mom’s favorite vegetables, and though I never ate it much as a kid, apparently that preference still got passed down to me somehow — but I’m not complaining!

I was craving some sort of Italian something, so I decided to take what was in my fridge and throw it together to make what ended up being a gorgeous layered eggplant “lasagna” — no gluten, no dairy, no nuts, seeds, or grains. Just vegetables and a little bit of homemade meat sauce, but you can omit the meat for a vegan/vegetarian option. Serious perfection.

Raw Vegan Ginger “Bananavo” Pie with Cacao Pepita Crust

Happy Friday! Today is 3/14, aka Pi Day. So instead of doing my bi-weekly Food Feature Friday, I’ll be posting a pi(e) recipe instead! This pie isn’t your typical pie. It doesn’t contain any flour, butter, or sugar. There’s no milk or cream. Yet it’s one of the creamiest pies I’ve ever eaten. So what is it, you ask? It’s raw. And vegan. And as far as the internet has told me, this pie doesn’t exist. Yet. Execpt for in my stomach. Right now.

I’ve been wanting to make a raw vegan pie for a while now, so this seemed like the perfect opportunity. While I don’t follow a raw or vegan diet, I do tend to incorporate raw/vegan foods into my diet fairly often — and who says your diet has to have labels anyway? Anything that’s healthy, delicious, and REAL is good enough for me. I also wanted the pie to be GREEN for St. Patrick’s Day on Monday! So it’s a Pi-Patrick’s Day Pie. That’s a thing, right?

I’d never used avocado in baked goods before, and the interwebz told me that Avocado Pie is a California “tradition” — but seeing as I’ve lived in California, oh I don’ know, my entire life and have never tried it before, I think they might be wrong. The traditional recipe calls for condensed milk which is obviously a big no-no if you’re dairy-free or vegan. So I decided to add cashews and banana instead. (P.S. Banana + Avocado = Bananavo… get it?)

So what’s it like? The avocado-cashew-banana base is thick and creamy and while it tastes ever so slightly of avocados, the ginger and banana definitely shine through. The subtly sweet cacao pepita (pumpkin seed) crust pairs perfectly with the soft spice of the filling. And all you need is a food processor to make it. What’s not to love?
